MALUNGGAY (Moringa oelifera) RECIPES

Hotdog con Malunggay sweet 'n sour
 As a mother who is a health conscious for her babies I found Malunggay (Moringa oelifera) a very economical and very nutritious food which no other vegetables can beat when it comes to nutrients that it gives. Ever since I put this "miracle tree" in our diet, our family stayed healthy... and we said "goodbye illness welcome healthy body".
Some recipes for mothers like me who wants nothing but the best for their family to stay healthy in a very economical way!


Preparation time (25 minutes)
INGREDIENTS:
 
  • 1 cup finely chopped malunggay
  • 4 hot dogs, cut in slices
  • 1 can (8 ounces) pineapple tidbits
  • 2 tablespoons butter or margarine
  • 1/2 cup chopped onion
  • 1 green bell pepper, cut in strips
  • 2 tablespoons cornstarch
  • 1 tablespoon brown sugar
  • dash salt
  • 2 tablespoons vinegar
  • 1 tablespoon soy sauce
  • 1 cup beef broth

PREPARATION:

Remove the malunggay leaves from its stem, soak in water for 5 minutes.  Drain and  squeeze the malunggay leaves until there is no water. Finely chop the malunggay,  then set aside. 
Drain pineapple, reserving syrup or juice. In a heavy skillet over low heat,  melt butter. Add onion and green bell pepper; cover and cook for about 5 minutes, until onion is tender.
Mix together cornstarch, sugar, salt, then stir in pineapple juice, vinegar, soy sauce and bouillon. Pour pineapple juice mixture over cooked onion and green pepper in saucepan. Cook and stir until mixture and bubbly; add hot dog slices, pineapple and malunggay leaves. Heat through; serve hot dogs con malunggay sweet n' sour over rice.
